Blueberry Orange Bread

Ingredients:

  • 1 Box Blueberry Muffin Mix
  • 2 eggs
  • 1/3 cup oil
  • 1 cup water
  • 1 tbsp orange zest
  • 1/2 cup fresh blueberries
  • juice of 1 orange
  • 1 cup powdered sugar
  • Extra orange zest for topping

Directions:

To make the bread, combine the muffin mix, 2 eggs, oil, water, and orange zest. Fold in the fresh blueberries. Pour batter into a greased loaf pan. Press a few more fresh blueberries into the top of the loaf. Bake at 375 for 50-60 minutes. Cover the top with foil for the last 20 minutes if it starts to get too brown.

To make the glaze, mix the orange juice and the powdered sugar. Add more powdered sugar or juice until you reach your desired thickness. Drizzle the glaze over the cooled blueberry orange bread loaf. Top with extra orange zest, and enjoy!

Blueberry Muffin Donuts

For the donuts:

  • 1 box Lehi Mills Muffin Mix
  • 2 eggs
  • ¼ cup oil
  • 1 cup water
  • Cooking spray or butter

Make the batter according to the instructions on the back of the box. Add lemon or orange zest if you’re looking for a twist! Once mixed, pour the batter into a plastic bag and clip one corner with scissors. Grease donut pan liberally. Pipe a small amount of batter into the pan. If you fill each donut slot more than 1/3 full, they will rise too much and won’t keep the donut shape. Bake at 375 for 15 minutes. The sides should be golden brown and crispy, and the top will be significantly lighter. That’s okay because you’re going to dip that side in glaze anyway.

For the glaze:

  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons water

Mix powdered sugar, vanilla, and water in a bowl. Whisk until well combined. The glaze should be opaque. If it’s too watery, add more powdered sugar. Dip the light side of each donut in the glaze. Set on a cooling rack to dry.
